1.Garlic choosing: raw garlic with intact skin and full granules

3.The stages of garlic fermentation
a.Mycin activation stage

Normal temperature fermentation: The final fermentation lasts for 7 days at 40 ℃ and 50% humidity. At this time, the quality of black garlic has reached the international standard
Finished product sterilization: after 30 days of fermentation, black garlic will grow into many fungi, which is not suitable for storage. We need to sterilize the finished product
