*Raw materials and treatment: After selecting mature and fresh fruit to be washed and drained, different methods are used to take juice. The fruits and vegetables are broken and beaten, and then juice is taken according to different juice extraction methods. The extracted juice is filtered to remove a part of the precipitate to obtain a turbid juice. Then, the juice to be clarified is added with an appropriate amount of pectinase or gelatin according to different varieties. After the clarified juice is filtered through a filter press or a centrifugal separator, an appropriate amount of sucrose is added to adjust the sugar content.

*Inoculation, fermentation: The yeast used in the fermentation includes wine yeast, sophisticated yeast and brewer's yeast, and Candida albicans, date palm yeast, and the like. After the yeast is expanded and cultured, it is introduced into the juice in an amount of 1% to 3%, and after fermentation at 20 to 30 ° C for 2-3 days, the fermentation filtrate is obtained by filtration.

*Formulation and sterilization: the juice filtrate is added with sugar, flavor, etc. to taste, 80 ° C, 5-10 seconds sterilization
