Vermicelli is one of the common foods in China. It is a silky food made of mung bean and sweet potato starch, hence the name vermicelli. It is often called vermicelli and winter noodles (mainly in Taiwan), the Korean peninsula is called Tang noodles, and Vietnam is called noodles.

The best vermicelli is made from mung bean, or corn starch or sweet potato starch, but the quality is not as good as mung bean vermicelli, because mung bean contains the most amylose, it is not easy to rot when cooked, and the taste is the most slippery. It resembles thin noodles and is sold after drying. It is best to soak it in water before eating to make it soft. The diameter of the vermicelli is generally about 0.5 mm, which is why it has the name "silk".

Materials

50g vermicelli / 150g pork / 1 hot pepper

1 scallion / 1 piece of ginger / 5 cloves of garlic / 1 tablespoon of bean curd sauce

Cooking wine 2 tsp / light soy sauce 1 tsp / dark soy sauce 1 tsp / sugar

6 tablespoons of water / 2 tablespoons of chicken sauce / 2 tablespoons of peanut oil / 1 red pepper

practice 1. Soak the vermicelli fully in advance; mince the onion, ginger, and garlic 2. Cut the green and red pepper into slices diagonally, chop the chives; chop the spicy bean paste 3. Add chicken juice to water to dilute and set aside; start the wok, heat the pan with cool oil and saute the chopped green onion, ginger and garlic 4. Add minced meat and bean paste and stir-fry until the color changes; add cooking wine and stir-fry evenly 5. Remove the soaked vermicelli and add it to the pot; after stirring evenly, add light soy sauce and a little sugar, and stir again evenly 6. Add diluted chicken juice and stir-fry evenly; after the high heat is boiled, turn to low heat, cover the pot and simmer, check the stir-frying frequently in the middle to avoid boiling 7. When the soup is near, add the dark soy sauce and stir-fry evenly; finally add green and red pepper and chive leaves, turn off the heat
